I hope you are not as disappointed by this recipe as my wife was when she found out I wasn’t referring to the giant tortilla chip sombrero from Despicable Me 2.


Steak Fajita Sombrero

The party hat your taste buds deserve

Prep Time - 35 minutes (not including marinating time)

Cook Time - 20 minutes

Serves: 4

Ingredients:

  • Skirt Steak (1 ½ pounds)

  • Olive Oil (¼ cup)

  • Soy Sauce (¼ cup)

  • Ground Cumin (1 tbsp)

  • Chili Powder (½ tbsp)

  • Smoked Paprika (½ tbsp)

  • Garlic Powder (1 tbsp)

  • Onion Powder (½ tbsp)

  • Orange Juice (fresh squeezed from 1 orange)

  • Cilantro (½ bunch)

  • Salt (to taste)

  • Pepper (to taste)

Vegetables

  • Red Onion (1)

  • Red Bell Pepper (1)

  • Yellow Bell Pepper (1)

  • Green Bell Pepper (1)

  • Jalapeño (1)

Tortillas

  • Masa (1 ½ cups)

  • Water (1 cup)

  • Salt (1 tsp)

Chipotle Crema

  • Sour Cream (8 oz)

  • Chipotles in Adobo (3 chipotle peppers and ½ tbsp of the sauce from the can)

  • Lime Juice (squeezed from ½ lime)

  • Salt (1 tsp)

Toppings

  • Oaxaca Cheese (to taste)
