If you are a Japanese American or grew up in Hawaii, you know this dish. It was at every family potluck growing up. It’s cool, refreshing, flavorful, and SO VERSATILE.

I hope that if you make this, you make it for a family/friends get-together, and they all love it as much I as do.

Somen Salad

A salad should be mostly noodles anyways

Prep Time: 20 minutes

Cook Time: 30 minutes

Servings: 8-10

Ingredients:

Salad
  • Somen Noodles (4 bushels or 300g)

  • Romain Lettuce (1 head)

  • Carrots (2-3)

  • Persian Cucumber (2)

  • Kamaboko (1)

  • Green Onions (4 stalks)

  • Spam (½ can)

  • Kani/Imitation Crab (2 cups)

  • Sesame Seeds (to taste)

Eggs
  • Eggs (4)

  • Sesame Oil (½ tbsp)

  • Sugar (½ tbsp)

  • Salt (to taste)

Dressing
  • Shoyu (100ml)

  • Sesame Oil (100ml)

  • Rice Vinegar (100 ml)

  • Sugar (50ml or roughly 3 ½ tbsp)

  • Avocado Oil/Neutral Oil (100ml)

  • Salt (to taste)

(Note: you can adjust the amount of dressing by maintaining the same ratios. You need 1 part of everything except the sugar is ½ part, and salt to taste)
