This is the meal I make when I want to impress someone. It is so simple to make, yet the end product is incredibly satisfying. It’s also easy to “improve” on. Want to add meat? Go for it! Feeling more veggies? It’s not what I would do…but you totally could! Think of this as your new, always in your back pocket, there when you need it, meal.


Creamy Peanut Noodles

Silky, salty, slightly unhinged—like the best kind of weeknight dinner.

Prep Time: 5 minutes

Cook Time: 10 minutes

Servings: 2

Ingredients:

Sauce
  • Peanut Butter (¼ cup)

  • Chinese Light Soy Sauce (2 tbsp)

  • Chinese Dark Soy Sauce (1 tbsp)

  • Rice Vinegar (1 tbsp)

  • Sesame Oil (½ tbsp)

  • Garlic (2 cloves)

  • Ginger (½ inch knob)

  • Sugar (1 tbsp)

  • Salt (to taste)

  • Noodle Water (½ - 1 cup)

Other
  • Noodles (250 grams)

  • Persian Cucumber (2)

  • Chili Oil (to taste)
